  • 6 oz shrimp peeled
  • 1 cup fresh spinach
  • 1 oz goat cheese crumbled
  • 1 tbsp ghee
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp lemon zest

Instructions
 

  • Cook shrimp in ghee with salt and pepper for 2-3 minutes until pink.
  • Add spinach and cook until wilted (2-3 minutes), then stir in goat cheese.
  • Garnish with lemon zest and serve.
