
Shrimp with Spinach and Goat Cheese
Ingredients
- 6 oz shrimp peeled
- 1 cup fresh spinach
- 1 oz goat cheese crumbled
- 1 tbsp ghee
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tsp lemon zest
Instructions
- Cook shrimp in ghee with salt and pepper for 2-3 minutes until pink.
- Add spinach and cook until wilted (2-3 minutes), then stir in goat cheese.
- Garnish with lemon zest and serve.
