
Cod with Zucchini Noodles
Flaky cod atop light, twirly zucchini noodles, offering a fresh, low-carb seafood escape.
Ingredients
- 8 oz cod fillet
- 1 cup zucchini noodles
- 2 tbsp olive oil
- 2 tbsp ghee
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tsp fresh dill
Instructions
- Season cod with salt and pepper, bake with ghee at 400°F (200°C) for 12-15 minutes.
- Sauté zucchini noodles in olive oil for 3-4 minutes, garnish with dill.
- Serve cod over noodles.
